  1. Pumpkin Risotto with Valpolicella Dop Ca’ de’ Rocchi

Ingredients:

  • 300 g Carnaroli rice
  • 500 g pumpkin
  • 1 onion
  • 1 liter vegetable broth
  • 50 g butter
  • 50 g grated Parmesan cheese
  • Olive oil
  • Salt and pepper to taste
  • A sprig of rosemary

Instructions:

  1. Begin by preparing the pumpkin: peel and dice it, then cook in a pan with a splash of olive oil and the rosemary until tender. Blend the pumpkin into a smooth purée.
  2. In a saucepan, sauté the finely chopped onion in olive oil until translucent. Add the rice and toast for a couple of minutes.
  3. Gradually add the hot vegetable broth, one ladleful at a time, stirring continuously. When the rice is nearly cooked, mix in the pumpkin purée and continue to cook until the rice is perfectly al dente.
  4. Finish by stirring in the butter and Parmesan cheese. Season with salt and pepper to taste.
