- Soft pressing with destemming and successive fermentation with maceration at 20/24 °C. Soft pressing. The resultant Valpolicella Superiore wine is repassed on the Amarone skins at the end of December

- The wine matures in 5-20 hectolitre new French and American oak barrels for about 8/12 months
